Sweet Potato Spice Pancake

  • 425g (15 Oz) sweet potato purée (or pumpkin purée)
  • 6 free-range eggs
  • 4 tbsp Way Up collagen
  • 1 tbsp honey
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/8 tsp cloves
  • 1 1/4 cup rice flour
  • 1/4 tsp baking soda

Method

  • Heat coconut oil in a skillet, pour 1/4 cup per pancake and cook on medium-low heat.
  • Serve with some whipped cream and a side of pastured bacon if desired.
