Give your typical roasted sweet potatoes a run for their money with these easy-to-prep pancakes that are sure to be a crowd pleaser no matter what time of day you serve them.

Sweet Potato Spice Pancake
- 425g (15 Oz) sweet potato purée (or pumpkin purée)
- 6 free-range eggs
- 4 tbsp Way Up collagen
- 1 tbsp honey
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/8 tsp cloves
- 1 1/4 cup rice flour
- 1/4 tsp baking soda
Method
- Heat coconut oil in a skillet, pour 1/4 cup per pancake and cook on medium-low heat.
- Serve with some whipped cream and a side of pastured bacon if desired.
